Smokey Chickpea Stew

Ingredients
4 garlic cloves chopped
2 tsp ginger grated
2 onions chopped finely
1 tbsp garam masala (or curry powder if preferred)
1 tbsp smoked paprika
1 tsp chili flakes
400g chopped tomatoes
400g chickpeas drained
300ml vegetable stock
1 tbsp olive oil
750g potato chopped into small chunks
Cous cous or rice to serve.
Directions
Heat olive oil in a large pan and add the onions, garlic and ginger. Cook for approximately five minutes until onions are clear.
Add paprika, garam masala and chili flakes to the pan and stir for approximately two minutes.
Add potatoes, stock, chickpeas and chopped tomatoes and stir well. Simmer on a low heat for 45 minutes stirring occasionally.
Meanwhile prepare cous cous or rice as per instructions.
Break down the potato chunks with a spoon in the pan to thicken and season with salt and pepper.
Serve with on bed of cous cous or rice.
