Buttered Garlic Samphire Sweet Potato

I often struggle to find recipes for samphire, well struggle for recipes that aren't seafood based. Almost every online recipe or cookbook using samphire uses it in a seafood dish. It's fair enough given it's from the sea, but I've always felt it had more potential than just an accompaniment to fish.
I came up with this recipe while trying to put together a quick lunch which was a bit different.
Ingredients
1 cup of butter
1 sweet potato
3 garlic cloves chopped
Samphire
Directions
Preheat oven to 200 degrees C (392 F)
Bake sweet potato for 45 minutes. (Alternatively microwave if a speedier lunch is preferred.
When potato is nearly ready, melt butter in frying pan and add garlic for one minute.
Add samphire and cook for approximately 3-5 minutes.
Slice potato and serve with samphire.
