Mushroom Stroganoff

Ingredients
1 Onion
200g baby mushrooms
4 cups pasta
500ml vegetable stock
butter
2 tbsp paprika
150ml sour cream
Salt
Pepper
Basil leaves
Directions
Melt butter in a large pan.
Slice onions and add to pan over a medium heat for approximately five minutes until soft.
Add pasta, mushrooms, stock to pan and bring pan to boil. Season with salt and pepper.
Turn head to medium and simmer for approximately 15 minutes stirring occasionally.
Turn the heat off and add sour cream and paprika to pan. Stir thoroughly.
Garnish with basil leaves and serve.
